Encased in a wax as purple as the heather-clad valleys of North Wales, our finest mature Cheddar is first combined with our balsamic caramelised red onion chutney made with Giusti Duchessa Carlotta Balsamic Vinegar of Modena. Next, we infuse the cheese with Giusti’s award-winning 3 Gold Medals Balsamic Vinegar of Modena, made with sun-ripened grapes plucked from the local vineyards surrounding Modena. The grapes are gently pressed and then the must is slowly cooked and aged in centuries-old oak barriques.
